Berry Chia Pudding

With the summer comes a packed schedule for many students. Whether you have just started an internship or have a summer job, sometimes it can be hard to make time for the most important meal of the day– breakfast. Here’s a go-to easy to prepare berry chia pudding perfect for a busy summer schedule.

Summer is great for many reasons, especially the fresh produce. It feels like everywhere you turn there is a local farmers market to pick up your weekly produce. We’ve got you covered on your next fruit-filled breakfast to incorporate in your everyday routine! This seven ingredient recipe is full of healthy omega-3 fatty acids, fiber, iron and calcium.

Ingredients

  • 1 ¾ cups blackberries, raspberries and/or diced mango (fresh or frozen), divided
  • 1 cup unsweetened almond milk or milk of choice
  • ¼ cup chia seeds
  • 1 tablespoon pure maple syrup
  • ¾ teaspoon vanilla extract
  • ½ cup whole-milk plain Greek yogurt
  • ¼ cup granola

Directions

  • Puree 1 and 1/4 cups fruit and milk in a blender or food processor until smooth. Scrape into a medium bowl; mix in chia, syrup and vanilla.
  • Divide the pudding between two bowls, layering each serving with 1/4 cup of the remaining fruit, 1/4 cup yogurt and 2 tablespoons granola.

Watermelon Mojito

Watermelon Mojito

In need of a refreshing summer drink? Try a Mojito, which originated in Cuba and is typically served in a highball glass. This take on a classic summer Mojito omits the typical refined sugars, while making sure it stays delicious. And it can be turned into a mocktail by replacing the rum with club soda. This is sure to become a warm weather favorite and is perfect for sitting poolside!

Ingredients

  • ½ oz. fresh lime juice
  • ½ cup of cut up watermelon
  • 5 mint leaves
  • sparkling water / soda water
  • 1 cup of ice
  • 1 ½ oz. white rum (optional)
  • ½ oz honey / agave (optional)
  • 1 lime wedge

Directions

  • Blend the watermelon cubes to create a puree.
  • Combine the watermelon puree, lime juice and sweetener to desired glass and stir.
  • Muddle 5 mint leaves in juice mixture.
  • Pour in white rum (omit if making this a mocktail).
  • Fill the glass with ice.
  • Top off with sparkling water / club soda.
  • Garnish with a lime.
