Bellido’s journey began long before the opening of Pisco Gastrolounge to his roots in Arequipa, Peru. Though he studied political science at UNC Charlotte and initially pursued a career in law, his true passion lay in a different realm. His love for hospitality, nurtured through years of working as a server and bartender, led him down a different path.
Inspired by mentors like prominent attorney and entrepreneur Estefan Latorre, and hospitality and nightclub guru Dave Grutman, Bellido honed his skills in event management and marketing, ultimately establishing the renowned Tequila House nightclub when he was only 18 years old.
Renzo’s culinary ambitions beckoned him to even greater heights. Inspired by the rich flavors of his native cuisine along with the vibrant energy of Miami’s nightlife, Bellido sought to create something exceptional. When the opportunity to transform the former Roxbury space in Uptown arose, he seized it.
The result is Pisco Gastrolounge, a fusion of traditional Peruvian cuisine and contemporary nightclub culture.
The name ‘Pisco’ pays homage to Peru’s traditional spirit, distilled from fermented grapes, while llamas adorn the decor, symbolizing Peruvian pride. With their own house brand of pisco, sourced directly from a Peruvian vineyard, Pisco Gastrolounge offers an unparalleled and dynamic taste of the country.
With Chef Carlos by his side, Bellido embarked on a quest for authenticity, scouring his native country for the finest ingredients and flavors.
